Oxtail Stew

Ingredients

  • 3.5 lbs / 1.5 kg Oxtail

  • 1 Grant's Gourmet Brown Stew Sauce

  • 1 Tbsp Browning

  • 1/2 Tbsp Salt (only add to your taste)

  • 1/4 cup Vegetable oil

  • 540ml x 2 Cans Butter Beans

  • 1 Liter Water (may need more)

  • 1 Lemon 🍋 or 1/4 cup Juice or 1/4 cup Vinegar

  • Spoon

Prep

  1. Wash oxtail with lemon juice

  2. Drain and wash with water

Seasoning - Grant's Gourmet Brown Stew Sauce

  1. Mix in 1/4 Jar thoroughly and cover. Marinate in the fridge for 30 mins or more

Cooking

  1. In a 8" + diameter pot add in oil

  2. Heat pot on med heat

  3. Add in seasoned oxtail slowly while stirring

  4. The oxtail may spring water, so keep stirring until the water evaporate and the frying process begins

  5. Fry the oxtail until you get the desired colour you want.

  6. Remove the oxtail and Drain all oil.

  7. Place oxtail back in the pot

  8. Add in the rest of the stew sauce, Browning and salt(to your taste)

  9. Cover pot and let simmer on low for 3 - 4 hours. For those who have pressure cookers you can pressure in in a fraction of the time.

  10. Pressure cooker Option. Add in all ingredients except oil and water Pressure for 45mins to 1hr15mins or until tender.

  11. Optional: when the meat becomes tender to your liking Add in 1-2 Cans of butter(butta) beans and let simmer for approx 10-15mins. WARNING ⚠️ do not over cook the butter beans it will super thicken your gravy.

  12. Let your oxtail rest.

  13. Pro tip: If you can wait - let cool and store in the fridge overnight. Follow best practice reheating (165F). The flavors then will excite you.
